1/4 Cup olive oil
1 Chopped onion
2 Stalks of chopped celery
2 Chopped carrots
1 Chopped pepper
1 Cup chopped green cabbage
1 Cup chopped red cabbage
1 Can chick peas rinsed and drained
1/2 Cup Arborio rice
1 Cup tomato purée
2 Boxes organic vegetable broth
Salt, pepper, chilli powder, smoked paprika to taste
•Sauté vegetables until softened.
•Add rice, chick peas, tomato purée and vegetable broth.
•Add spices to your taste
•Cook uncovered for approximately 15 minutes.
•Continue to cook covered until vegetables and rice are soft.
